Coriander butter: basic recipe and variations
For a basic recipe for coriander butter, you need the following ingredients:
- 200 g butter (organic if possible)
- ½ bunch of coriander
- salt and pepper
- 1 tablespoon of lemon juice
❶ It is best to take the butter out of the refrigerator several hours before preparing it so that it can be easily processed afterwards. It should be as soft as possible.
❷ Whisk the butter with a blender and add the lemon juice and a little salt and pepper. Mix the mass thoroughly.
❸ Cut the coriander into small pieces and add it to the butter and gently stir the mixture with a whisk. Taste the finished herb butter and season if necessary.
❹ Now you can put the coriander butter in a bowl and refrigerate. You can also spread the butter on parchment paper and then form a roll from it. Flip the paper around and twist the ends together like a candy. Then put the butter in the fridge for about 2 - 3 hours.
