Especially in winter, when it is bitterly cold outside, we like to cook a soup. It warms from the inside and is also made quickly. But also in summer, soups are a delicious treat for the palate, especially when they are cold. Because then they give us the necessary refreshment.
Classic soups such as tomato soup, potato soup or broccoli cream soup are of course very popular in winter, but beetroot soup, pumpkin soup and paprika soup are also increasingly being cooked because they bring a welcome change to the plate.
Although celery is mostly known only as a side dish for soup greens, you can conjure up significantly more from the root vegetables. What do you think from this delicious soup?
Celery soup - tasty and healthy
If you want to cook a celery soup, you need the following ingredients for the basic recipe:
- 1 - 2 tubers of celery (as a starter 1, as a main course 2 tubers)
- 1 - 2 shallots
- 500 - 750 ml broth (chicken broth or vegetable broth)
- 100 ml cream
- 1 sprig of thyme
- 1 bay leaf
- some nutmeg

Cut the shallots and the peeled celery into small cubes. Then briefly fry the onions in a tablespoon of butter and then add the celery. Pour the amount onto the broth, then add the thyme and bay leaf. Let this mass simmer for about 15 minutes until the celery is soft.

When the celery has a soft consistency, you can remove the bay leaf and thyme and puree the soup.

Then bring the soup to the boil again briefly and season with salt and pepper. A pinch of nutmeg adds a special note.

Depending on your taste, you can also dice 2 potatoes and braise with the celery. A peeled, diced apple or pear pieces also give a particularly good aroma. If you want a soup, you can add croutons or smoked salmon or trout.
